Pasta is a type of food made from flour, water, and sometimes eggs, which is mixed, kneaded and formed into various shapes, and boiled prior to consumption. While the name comes from Italy, pasta is very popular all over the world. The English word pasta generally refers to noodles and other food products made from a flour and water paste, often including egg and salt.

There are two major classifications: pasta fresca (fresh) and pasta secca (dried). From here, there are more than 400 unique types of pasta: sheets, strips, long strands, cylinders, unique shapes, flavors, and many other local varieties. There are more names for pasta than the mind can retain, yet all are made from the same basic ingredients — 100% durum wheat and water with a specific percentage of acidity and humidity under Italian law. Varying from the basics, light flavors and colors can be added to pasta with egg yolk, spinach, tomato paste, chocolate, and even squid ink. Each of these pastas creates its own unique dining experience when properly served. Another crucial aspect of the experience is pasta being married with an appropriate, complimentary sauce. The individual shape and texture given to pasta can be somewhat of a code in determining the proper sauce. A simple rule of thumb would be as follows: thick pasta = thick sauce, light pasta = light sauce.

Pizza a la Provenzal {Inspired Lunch}

Pizza with Cheese, Portobello Mushrooms, Garlic and Parsley

“I’m craving for pizza” I told J. on Saturday. I had just finished talking with my Mother on the phone ‘mostly’ about my Grandmother’s cooking and her passion for garlic and parsley! Yes, it was time for something “a la provenzal” {something with garlic and lots of fresh parsley}–I’m anxious already, he said.

After picking up some parsley from the garden , I started kneading, chopping… and finally the aromas of fresh baked pizza dough began to fill our house. And here is the picture that I’ve taken while J. was finishing setting the table.

Pizza a la ‘Provenzal‘ {Cheese + Portobello Mushrooms + Garlic + Parsley}
This Pizza does not need pizza sauce. The idea is to taste the flavors of cheese, mushrooms, garlic and parsley.

Dough:
2 1/2 C. all- purpose flour / plain flour
1/4 tsp. salt
2 tsp. Instant dry yeast
1 C. warm water
2 tsp. olive oil
2 C. Cheese { any cheese you like}{ I used, mozzarella, parmesan and blue cheese}
1/2 medium yellow onion, finely sliced


Provenzal Mushrooms:
250 g Portobello Mushrooms, roughly chopped
2 garlic cloves, finely sliced
1 1/2 C. Parsley chopped
1/4 C. olive oil + about 1 Tbsp. butter
Salt to taste
Pepper to taste {optional}

Preparation: 
Dough
In a bowl add flour and salt. Set aside. Take a measuring cup and add yeast, warm water and  sugar–Mix well and cover with a plate.Wait (about 15 minutes) for bubbles to appear in the yeast.Add yeast mixture to the flour plus the oil. Mix together all the ingredients using a wooden spoon to form the dough.Now using
your hands work the dough for about 5 minutes until smooth and elastic.Add a little flour while kneading.
Cover and set in warm part of the kitchen-let the dough rest for 30
minutes. 


* Preheat oven at 180C / 355F 15 minutes before baking the pizza.


When ready, just punch down the dough over a floured surface and shape into a circle.

Transfer the dough into lightly floured baking tray. Brush the dough with a bit of olive oil and sprinkle with the cheese and onion slices. Bake for 15 minutes. 

Mushrooms a la Provenzal:
In the meantime, heat up a frying pan, add olive oil and garlic. Cook the garlic for a couple of seconds until the garlicky aroma develops.Add mushrooms and sautee for a couple of minutes, add butter, salt and pepper.Cook mushrooms until soft, turn off. And add fresh parsley. 

Remove pizza from the oven add the mushrooms a la provenzal. Garnish with some parsley leaves.Serve immediately.

Thai-Style Chicken Legs Recipe

Recipe borrowed from Smitten Kitchen

Ingredients:
5 garlic cloves, coarsely chopped
1/4 cup chopped cilantro (or flat-leaf parsley if you are cilantro-averse)
1/4 cup Asian fish sauce
1/4 cup vegetable oil
2 tablespoons hoisin sauce (I accidentally doubled this and can only advise you do the same)
1 1/2 teaspoons ground coriander
1 teaspoon kosher salt
1 teaspoon freshly ground black or white pepper
8 whole chicken legs, split, or 8 drumsticks and 8 thighs (about 5 pounds total)
Thai sweet chili sauce, for serving
